Easy Meatloaf Recipes

These are some of our family's favorite meatloaf recipes. Grandma's Meatloaf recipe is the meat loaf that my paternal grandmother used to serve for Sunday dinner. The Quick Meatloaf recipe is my quickie version of meatloaf, and the kids just love it.

The fun thing about meatloaf is that you can use just about anything that you have in the cupboard, as long as you have the meat and the eggs. I substitute dried potatoes, corn flake crumbs, oatmeal or homemade bread crumbs if that is what I happen to have in the cupboard. For variety, I use various herbs and seasonings to spice it up. Don't be afraid to experiment.

This is a wonderful vegetarian alternative and great for those cold meatloaf sandwiches the next day. This is basically the Quick recipe with a few substitutions to make it meatless.
